Weeknight Meals Paired With Sovi
Sparkling White and Lentils, Greens & Feta
We have been enjoying our Sparkling White with a lot of legume-focused weeknight meals lately. Any combination of beans, lentils or chickpeas, with some veggies and a fresh cheese works fabulously with this wine. It's our new go-to for a light and healthy meal for summertime weeknights.
This particular recipe is from Carla Lalli Music's cookbook "That Sounds So Good". It includes black lentils (Rancho Gordo's black caviar lentils are our favorite) dressed in olive oil, vinegar, and mustard, leafy greens sauteed with mustard seeds and turmeric, and feta marinated in some olive oil with red pepper flakes and rosemary.
The overall brightness of the meal calls for a crisp white wine and our Sparkling White fits the bill because it's dry with bright acidity.
